Ingredients
3 cups Helsekorn hull-less barley groats
1 cup seeds (e.g., a mix of flaxseeds, sunflower seeds, pumpkin seeds)
0.25 cup canola oil
0.25 cup brown sugar
0.25 cup liquid honey
0.5 teaspoon cinnamon
0.25 teaspoon salt
1 teaspoon vanilla sugar
2 cups of your choice of nuts or dried fruit (add after baking)
Instructions
- Preheat the oven to 170°C (340°F) and line a large baking tray with parchment paper.
- Place the barley flakes in a large mixing bowl and set aside.
- In a small bowl, whisk together the remaining ingredients (except nuts/dried fruit) until smooth. Pour this mixture over the barley flakes and mix well.
- Spread the mixture evenly on the prepared baking tray and bake for 18 minutes, stirring every 5 minutes.
- Cool the mixture on a wire rack. WAIT 5 minutes before stirring after removing from the oven, or it will clump.
- Once completely cooled, transfer the granola to a large mixing bowl.
- Finally, add 2 cups of your preferred nuts or dried fruit.
Store in an airtight container (a jar or tin is recommended).
