Hearty Barley Pie with Mushrooms

A delicious pie with mushrooms.

Ingredients

For the crust:
200ml wheat flour
200ml quick-cooking hull-less barley flakes
50g melted butter
200ml light crème fraîche
1 teaspoon salt
2 tablespoons water

For the filling:
1 red onion, sliced
150g mushrooms
Butter for frying
100g shredded ham
100g grated cheese
6 eggs
200ml cream
Salt and pepper


Instructions

  1. Combine all the crust ingredients in a food processor until well mixed. Chill the dough for 30 minutes.
  2. Press the dough into a greased ovenproof dish. Prick the base with a fork and pre-bake for 20 minutes at 180°C (355°F) in the middle of the oven.
  3. Slice the mushrooms and sauté in butter. Add the mushrooms, cheese, and ham to the pie crust.
  4. Whisk together the eggs, cream, salt, and pepper, and pour over the filling. Arrange the onion rings on top, and bake at 180°C (355°F) for about 40 minutes.
  5. Serve with a green salad on the side.
