Granola with Hull-less Barley

Delicious granola with crunchy flakes of hull-less barley from Helsekorn.

Ingredients

3 cups Helsekorn hull-less barley groats
1 cup seeds (e.g., a mix of flaxseeds, sunflower seeds, pumpkin seeds)
0.25 cup canola oil
0.25 cup brown sugar
0.25 cup liquid honey
0.5 teaspoon cinnamon
0.25 teaspoon salt
1 teaspoon vanilla sugar
2 cups of your choice of nuts or dried fruit (add after baking)


Instructions

  1. Preheat the oven to 170°C (340°F) and line a large baking tray with parchment paper.
  2. Place the barley flakes in a large mixing bowl and set aside.
  3. In a small bowl, whisk together the remaining ingredients (except nuts/dried fruit) until smooth. Pour this mixture over the barley flakes and mix well.
  4. Spread the mixture evenly on the prepared baking tray and bake for 18 minutes, stirring every 5 minutes.
  5. Cool the mixture on a wire rack. WAIT 5 minutes before stirring after removing from the oven, or it will clump.
  6. Once completely cooled, transfer the granola to a large mixing bowl.
  7. Finally, add 2 cups of your preferred nuts or dried fruit.

Store in an airtight container (a jar or tin is recommended).
