Ingredients
For the crust:
200ml wheat flour
200ml quick-cooking hull-less barley flakes
50g melted butter
200ml light crème fraîche
1 teaspoon salt
2 tablespoons water
For the filling:
1 red onion, sliced
150g mushrooms
Butter for frying
100g shredded ham
100g grated cheese
6 eggs
200ml cream
Salt and pepper
Instructions
- Combine all the crust ingredients in a food processor until well mixed. Chill the dough for 30 minutes.
- Press the dough into a greased ovenproof dish. Prick the base with a fork and pre-bake for 20 minutes at 180°C (355°F) in the middle of the oven.
- Slice the mushrooms and sauté in butter. Add the mushrooms, cheese, and ham to the pie crust.
- Whisk together the eggs, cream, salt, and pepper, and pour over the filling. Arrange the onion rings on top, and bake at 180°C (355°F) for about 40 minutes.
- Serve with a green salad on the side.
