Fiber Scones

Fiber scones with raisins and chopped hazelnuts—a healthy and delicious choice for breakfast, lunch, or an evening snack.

Ingredients

2 tablespoons butter
300ml milk
1 tablespoon baking powder
1 teaspoon sugar
1 teaspoon salt
40g Helsekorn barley fiber
200ml Helsekorn barley flour
300ml wheat flour
100ml raisins and/or chopped hazelnuts


Instructions

  1. Combine all ingredients in a stand mixer and mix until you have a smooth dough.
  2. Divide the dough into two portions and shape each into a round, about 15 cm in diameter.
  3. Place both rounds on a baking sheet lined with parchment paper.
  4. Score a cross on top of each so you end up with four equal pieces.
  5. Prick them lightly with a fork, and bake in the middle of the oven at 240°C (465°F) for 10–15 minutes until golden.

Tip: Serve freshly baked scones with crème fraîche and freshly made jam!
