Hull-less Barley Energy Bar

This energy bar is packed with great flavors and nutrients. Wonderfully tasty! Perfect for hiking or post-workout.

Ingredients

150g Helsekorn quick-cooking hull-less barley flakes
100ml chopped almonds
100ml chopped walnuts
1 tablespoon sunflower seeds
1 tablespoon ground flaxseeds
100g dried apricots or raisins
5 tablespoons honey
200ml apple juice
1 teaspoon cinnamon
1/2 teaspoon cardamom
A pinch of salt
200g dark chocolate


Instructions

  1. Toast the almonds and walnuts in a frying pan. Let cool and chop into small pieces.
  2. Cut the apricots into small strips.
  3. Heat the apple juice and add the honey and barley flakes.
  4. Add the remaining ingredients (except the chocolate) and mix well.
  5. Press the mixture firmly into a loaf pan.
  6. Pour melted chocolate over the top.
  7. Place in the refrigerator until set.
  8. Cut into bars of your desired size.
