Traditional Christmas Porridge with Hull-less Barley

A tasty take on the classic rice porridge, that’s also good for your body.

Ingredients

100ml Helsekorn hull-less barley groats
200ml water
500ml milk
A pinch of salt


Instructions

Note: Helsekorn hull-less barley does not require soaking before cooking.

  1. Bring the water to a boil.
  2. Add the barley and salt.
  3. Simmer over low heat until almost all the water is absorbed.
  4. Gradually add half of the milk while stirring and bring to a boil.
  5. Continue to add the remaining milk little by little.
  6. Stir regularly, and serve when the porridge has reached your preferred thickness.

Cooking time: 45–60 minutes


Oven-Cooked Porridge

For those heading to work or wanting to spend the morning on other activities, you can cook the porridge in the oven! Bring the porridge to a boil on the stove first. Then set your oven to 80°C (175°F), place the pre-boiled porridge in the oven, and let it cook for 1½–2 hours. Before serving, you can add a little extra milk and stir the porridge as you reheat it.
